World Cuisine Tour 2020: Mexico

| 05-May-2020 | It’s Cinco de Mayo. My Instagram feed is blowing up with pictures of street tacos and margaritas. Sounds like a plan. I picked two new recipes for today’s adventure – including homemade tortillas.

I put the beef in the marinade as per the recipe, the started to mix tortilla dough. While I rolled out the torillas, Jeff tended to their cooking (baking?) on the griddle.  Quickly cooked up the beef and set up a taco assembly line. Hmm, these tortillas seem a little dry; quick trip into the microwave wrapped in a damp cloth. Hmm, still a little wonk. Roll with it.

So, yeah, wonk they were. The texture of a frisbee. And the beef was a little dry, too. Not my day in the kitchen.  Beaten by street tacos.  Somewhat amusing considering I’ve been experimenting with a new recipe nearly weekly for about 5 years. Epic kitchen fail is rare.

Anyway, the Spanish Rioja was excellent.

Fortunately we had some store-bought tortillas on hand for the save.
